Low Carb Chili - (Kristi Original - Came up with when I had Gestational Diabetes)

Ingredients:
1 lb of ground beef
2 cans of chili beans or whatever beans you want
1 jar of salsa
1 can of tomato sauce
1 small can of green chilies
1 can of tomatoes and green chilies
4 cut up Italian sausages, mine were a little larger than hotdogs

Chop up the following fresh vegetables
1 yellow summer squash
1 zucchini
1 onion
1 red pepper
1 tomato
Mushrooms (1/2 box)

Seasonings:
Worcester Shire Sauce
Chili Powder
Garlic (I used Garlic Garlic from Tastefully Simple)
Seasoning Salt
Cumin
Fiesta Party Seasoning from Tastefully Simple

Optional Toppings:
Avacado
Plain Greek Yogert
Shredded Cheese

Instructions:
Brown the beef with a few onions. Season with all of the seasonings to taste. Drain the meet. Add all of the chopped vegetables and season some more. Cook until the vegetables are cooked completely. Add all of the remaining ingredients and season some more. You will need a lot of chili powder to make it taste like chili, maybe 2 tablespoons? Season to your own taste. Serve when hot. Optional: Top with some or all of the toppings.

Broccoli Steamed with Cheese

Coconut Oil
Broccoli
Salt
Cheese

Heat Coconut Oil in a pan. Toss broccoli in the coconut oil and add salt. Add water, cover the pan, and steam for about 5-10 minutes until the broccoli is cooked lightly and is still crispy. Top with cheese.

Chicken Cherry Salad (Similar to Damico and Son Turkey with Dried Cherries Salad)

1/2 Box of Rotini Noodles (Whole Grain)
Dried Cherries - 1/2 of a 5 Oz Bag(2.5 oz)
Almonds - 1/2 of a 8 oz bag (4 oz) **Note** Chris thought the almonds were too hard an alternative would be pecans
Grapes Halved - About 1 Cup
1/2 Onion Finely Chopped
Mayo - About 1 Cup
2 Tsp of Sugar
Sour Cream - About 1/4 a Cup
Cooked Chicken -I used one can
Olive Oil

Cook the noodles. Drain and add a little bit of olive oil to prevent sticking. Add ice to cool down the noodles quickly. Once cooled mix the noodles with the rest of the ingredients and enjoy.

Optional Alternative:
Add finely chopped celery to the above ingredients.

Breakfast Fruit Smoothy

Blueberries
1 Cutie/Orange
Grapes
Banana
Almond Milk
Ice
Ground Flaxseed

Blend in the Blender and Enjoy

Variation - Add a 1/2 a cucumber or add peanut butter

State Fair Gizmos - Italian Open Face Sandwich (Kristi and Chris' Reenactment)

Hoagies Cut Open, Like a Hotdog Bun
1 Lb of Ground Italian Sausage (we use hot)
Optional - Mushrooms (Fresh or Canned) Sliced
Optional - 1/2 an Onion Chopped
Butter
Garlic - Powder, Fresh, Garlic Garlic, Whatever
Spaghetti Sauce (We use Newman's Own Sockarooni)
Mozzarella Cheese

Cook the italian sausage with the optional onion. Add mushrooms if you would like them. Drain and set aside.

Put the sliced hoagies on a cookie sheet. Butter them and sprinkle them with garlic. Put them in the oven on broiler low. Pull them out when they are toasted brown.

While the hoagies are toasting heat up the spaghetti sauce.

When the hoagies come out of the oven top them with the italian sausage, spaghetti sauce, and mozzarella cheese. Put them back in the oven until the cheese is melted.

Remove and Enjoy. Yum!

Estimated Prep and Cook Time 30-40 Minutes

Virgin Pina Colada II

1 Can of Bacardi Pina Colada Frozen Mix
1 can of hot water
Blender full of ice
Rum Extract
Grenadine

Blend. Pour into a glass and top with grenadine. Stir and Enjoy.

Roast Beef Sandwich

Bread
Roast Beef
Onions
Cheese
Butter

Saute the onions in a pan. Add the roast beef to the pan and cook the meat. Butter two slices of bread on one side each. The buttered side will face down in the pan. Add the cheese to the non buttered side of the bread, add the beef and onions. Grill the sandwich like a grilled cheese sandwich. When the sandwich is toasty brown, it is ready to eat. Yum!

Wisconsin Beer Cheese Soup

1-2 Large Potatoes, cubed and boiled
1/2 Cup Onions, finely chopped
1 Cup Shredded Cheese (Cheddar)
8 oz Velveeta Cheese, cut into small cubes
2 Tablespoons of Butter
1/4 Cup Flour
1 Can Chicken Broth
1-1/2 Cups of Cream
3/4 to 1 Cup Beer (1 Bottle)

4 Servings
(**The recipe says, I have substituted part whole/part skim milk for the cream with success. Also adding bacon on top of the soup is good.)
