Slushy Punch

SERVES 50

3 Small Pkg Jello (Any Flavor)
2 (46oz) Cans of Pineapple Juice
1 (16oz) Bottle of Lemon Juice
2 Quarts of Ginger Ale
9 Cups of Boiling Water
4 Cups of Sugar
4 Cups of Warm Water

Dissolve Jello in boiling water. Mix sugar in 4 cups warm water, Bring this to a boil and add Jello mix. Cool. After cooled, add lemon and pineapple juices. Mix well. Freeze in 2 ice cream containers. (Jeanna suggested zip lock bags.)

Remove from freezer 3-4 hours before serving. Add 1 quart ginger ale for each pail.

You can put the mixture in a punch bowl, then add the pop or ginger ale.

Puppy Chow

1 Cup Peanut Butter
1/2 Cup Butter
1 Pkg Chocolate Chips
1 Box Crispix or Whatever (Regular Size)
3 Cups of Powdered Sugar or 1/2 a Bag

Melt the first 3 ingrediants in the microwave or on the stove. Shake all the ingrediants together in a bag.

Sausage Corn Chowder

1 Lb Turkey Kielbasa
1 Cup Chopped Onion
4 Cups Cubed Peeled Potatoes
1 tsp Salt
Black Pepper to Taste
1/2 tsp Dried Crushed Marjoram
2 Cups Water
1 Can 17oz Can Cream-Style Corn
1 Can 17oz Can Whole Kernal Corn
1 Can 12oz Can Evaporated Milk

Add Kielbasa, Onion, Potatoes, Salt, Pepper, Marjoram & Water. Bring to boil, then reduce heat and simmer until the potatoes are tender. (If using a crockpot, add water as needed.)

Add Corn and Evaporated Milk. Heat until hot and then serve. Add cheese to garnish. Freezes well.

Notes:
*We used Hot/Spicy Sausage and Pepper Jack Cheese. Mmmmm.
*Karla uses ground sausage instead of Kielbasa. She browns it well, until it is crunchy and crumbly. She also uses Yukon Gold Potatoes.

Gazpacho (Kristi's)

Gazpacho Base: (Blend until creamy and smooth in the blender)
5-6 Large Tomatoes
1/2 Red Bell Pepper
1/2 Jalapeno Pepper
2-3 Slices of Onion (I used a red onion)
1 Cucumber Peeled
4 Tbsp Olive Oil
2 Tbsp Red Wine Vinegar
1/2 Lime (Juice squeezed into the blender)
4 Cloves of Garlic
5? Bunches of Fresh Cilantro
Sea or Regular Salt

Chopped and Added to Base: (Quantity varies to taste)
Basil - Fresh or Dry
Cayenne Pepper
2 Ears of Raw Corn (Corn cut off and put in base)
2 Avocados
1/2 Red Pepper
6 Mushrooms
1 - 3.8oz Can of Slice Black Olives
1 - 15oz Can of Seasoned Black Beans (Bush's Best)
1 Slice of Jalapeno Finely Chopped
1 Slice of Onion Finely Chopped
1 Chopped Tomato

Chill overnight and serve.

1/2 Red or Green Pepper
Pinch of Cayenne Pepper

Chill overnight and serve.

Yummy Cauliflower - Yes I did just write yummy and cauliflower together

Ingredients
Cauliflower
Olive Oil
Seasoning - Salt and Cayenne Pepper

Preheat the oven to 400 degrees.
Break the cauliflower into smaller pieces and put them on a baking sheet.
Brush the cauliflower with olive oil and sprinkle with seasoning.
Bake for 30 minutes.

Spicy Guacamole (Kristi Original)




The measurements are not exact. I tend to pour ingrediants in until it looks and tastes good.

2 Avacados, cut up
3 Scoops of Sour Cream (1/3 cup?)
1/2 Tamatoe, chopped up
1/4 Onion, finely chopped
1 Jalepeno Pepper, finely chopped (Add whatever amount you want to make it spicy. See note below)
Garlic Powder
Garlic Garlic from Tastefully Simple
Seasoning Salt

Put all of the ingrediants in a bowl. Mash everything well and stir. Add any additional jalepenos or seasoning to taste.

**Notes**

The hottest part of the jalepeno is the white part in the center of the pepper that the seeds are connected too.

Be careful with the jalepenos because the hot stays on your hands. Do not touch your eyes after handling the pepper. I have heard you can use gloves.

You could use fresh garlic if you have it.

I use a potato masher to mash all of the ingrediants.

I used a food chopper from Pampered Chef to chop up the onion and jalepenos.

**To make this vegan, do not add the sour cream**

Renee's Salsa Verde

~mild roasted-tomatillo salsa~

Ingredients:
1 1/2 lbs tomatillos
1/2 cup chopped white onion
1/2 cup cilantro
1 Tbsp lime juice
1/2 tsp sugar
2 jalapenos - stemmed/seeded and chopped (save seeds/veins for extra heat
if desired)
salt to taste

Process:
* Roast tomatillos - remove paper husks from tomatillos and rinse, cut in half and place cut side down on a foil-lined baking sheet, broil until skin starts to blacken
* Add roasted tomatillos, onion, cilantro, lime juice, sugar, and jalapenos in blender; chop/mix until blended
* Add salt to taste; can add jalapeno seeds/veins to taste; refrigerate

makes about 3 cups

Renee's Salsa Rojo

~medium-hot cooked tomato salsa~

Ingredients:
2 medium tomatoes, diced (or canned fire-roasted diced tomatoes)
1 jalapeno pepper, seeded and diced
1 serrano pepper, seeded and diced
1/4-1/2 habanero pepper, seeded and diced
4 cloves garlic, peeled and minced
1/4 cup cilantro
1 1/2 tsp salt
1/4 cup water

Process:
* Add all ingredients together in a blender, puree until liquified
* Pour mixture into hot saucepan, simmer for 15-20 minutes until mixture
begins to darken, stirring occasionally
* Refrigerate

makes about 2 cups

-----> variation: for a chunkier salsa, add diced tomatoes, onions, bell peppers after puree (include in simmer)

Tiramisu Brownie Squares - Pampered Chef


1 Package (19-21 Ounces) Brownie Mix (Plus ingredients to make cake-like brownies)
1 Cup Milk
1/4 Cup Instant Coffee Granules
1 Container (12 oz) Frozen Whipped Topping, thawed, divided
2 packages(3.4 oz each) Cheesecake instant pudding and pie filling
20 chocolate creme-filled sandwich cookies, (Oreos), coarsely chopped (2 cups)
2 Tablespoons semi-sweet chocolate morsels, grated
1/4 teaspoon Pantry Korintje Cinnamon (Pampered Chef - You could try cinnamon)

Preheat oven to 350 degrees. Lightly spray 9 x 13 pan with nonstick cooking spray. Prepare brownie miex according to package directions for cake-like brownies.

When the brownies are cooled make the following to top the brownies with:

Combine milk and instnat coffee granules; stir until dissolved. Add half of the whipped topping and all of the pudding mix; whisk until smooth. Coarsely chop cookies (I use the Pampered Chef chopper) and fold into the pudding mixture. Spread filling evenly over brownies.

You can top the pudding mixture with the remaining whip cream in diagonal lines for decoration or just top all of the brownies. Grate chocolate morsels over whipped topping. Sprinkle with the cinnamon.

Best Lasagna Ever - My Mom's


1 Lb Hamburger or Ground Turkey
1 Medium Onion Chopped
1 tsp Italian Seasioning
1 tsp Basil Leaves or 1 tsp of Italian Seasioning
1 tsp Salt
1/2 tsp Garlic Powder
1/4 tsp Pepper
1/2 Cup Ketchup
2-15 oz Tamato Sauce
1 Tbsp Parsley Flakes
2 Tbsp Sugar
1/2 cup Water
2 Tbsp Worcestershire Sauce
1 Small Can of Mushrooms
Optional: Cyanne Pepper or Hot Sauce
1 Lb Mozzarella Cheese
1/2 Lb of Swiss Cheese
Lasagna Noodles


Sauce:
Crumble, brown, and drain the hamburger or ground turkey. Add the onion, all of the seasioning, Ketchup, Tamato Sauce, Water, Mushrooms, and Worchestershire Sauce. (Basically add all of the ingrediants listed above except the cheese and noodles.)

Putting the Lasagna Together:
In a 9 x 13 pan put in a layer of noodles, sauce, and 1/2 of the 2 cheeses. Depending on your pan you can do 2 or 3 layers. If you do 3 layers, you will need more cheese. Finish with the cheeses on top.

Cooking:
Cover the lasagna with foil for cooking.
If you put cooked noodles into the lasagna your cook time will be 30 minutes at 350 degrees.
If you use raw noodles for the lasagna, your cook time will be 1 hour and 15 minutes at 350 degrees.

Fruity Sunset Drink (Kristi Original)


Original Recipe:
Orange Juice
Grenadine
Cherry
1/2 Shot Peach Schnapps
1/2 Shot Malibu Rum
Whip Cream

Pour the Orange Juice in glass. Mix in Peach Schnapps and Malibu Rum. Put the tip of a spoon in the top of the drink upside down. Slowly pour the grenadine on the spoon. The grenadine will sink to the bottom creating a sunset colored drink. Drop in cherry and top with whip cream.

Kristi's Non-Alcoholic Version
Follow the instructions above without the alcohol.

**Vegan Option, Do not add Whip Cream**

Easy Pecan Pie


1 - 9" Unbaked Pie Shell
2/3 Cup Sugar
1/4 Cup Butter Melted
3 Eggs
1 - 12 oz Jar Smucker's Carmel Topping
1-1/2 Cups Pecan Halves

In a bowl beat eggs slightly with fork. Add sugar and stir until dissolved. Stir in carmel topping and add butter. Mix well. Stir in pecans. Pour into pie shell. Back at 350 degrees for 45 minutes or until knife inserted into the center comes out clean. Cool before serving. Store chilled.

Sweet Potatoe Fries (Kristi Original)

Sweet Potatoes (I did two for two people)
Butter
Salt

Preheat the oven to 400 degrees. Peel and slice the sweet potatoes. Put them on a cookie sheet. Melt butter and put it on top of the potatoe slices. Sprinkle with salt. Bake for 45 minutes, until tender.

**Vegan Option, Use Olive Oil instead of Butter**

Vegetarian Chili (Kristi Original)

Olive Oil
3 Garlic Cloves
1 Medium Onion
2-3 Red Peppers
3 Jalapenos
2 Zucchini
1 Yellow Summer Squash
5 Mushrooms
6-8 Roma Tomatoes
1 Egg Plant
1 Can Corn or Frozen Corn
1 Can Black Beans
1 Can Spicy Chili Beans
1 Can Kidney Beans
Tomato Juice
Chili Powder
Cayenne Pepper
Salt
Pepper

Cut up all of the vegetables. Drain the canned corn. Saute the vegetables in olive order and garlic. For each group of vegetables that you saute sprinkle them with the seasoning. Add the canned and frozen items. Finish with tomato juice. Add as much as you would like for broth. Add more chili pepper and cayenne pepper until it tastes good.

Crock Pot Roast (Kristi Original)

1 Roast
1-1/4 cup of water
1 can of cream of mushroom soup
1 package of Lipton onion soup mix
onion onion seasoning - Tastefully Simple
1/2 onion

Put roast and onion in large crock pot (my roast was frozen). Top with water, mushroom soup, onion soup, and onion onion seasoning. Set on low and cook until it is done.

My roast cooked for 9 hours while I was at work. It was very tender and there was a nice broth to make gravy. I served it with green bean cassarole, mashed potatoes, bread, and cookies for dessert.

Meaty Chili (Kristi Original)

This is a meaty chili recipe because it has two types of meat and less vegetables than I like, but it was still very tasty. I would normally add peppers, fresh tomatoes, and salsa, but I didn't have any.

1 Pound Hamburger
1-1/2 Onions
3 Organic Spicy Italian Sausages Cut into bite size pieces
1 can of diced tomatoes with jalapenos
2 cans of tomato sauce
2 cans of kidney beans
2 cans of spicy chili beans
smoky Tabasco sauce
Garlic Garlic Seasoning - Tastefully Simple
Fiesta Party Mix Seasoning - Tastefully Simple
Chili Powder - Tastefully Simple
Seasoning Salt
Worcester Shire Sauce
Cayenne Pepper

Brown the hamburger and onion together. Season with Tabasco, Garlic Garlic, Fiesta Party Mix, Chili Powder, Seasoning Salt, Worcester Shire Sauce, and Cayenne Pepper. When it is cooked, drain the hamburger and add the remaining ingredients. Season with garlic garlic, tabasco, seasoning salt, cayenne pepper and a bunch of chili pepper until it tastes good. Cook until hot.
