Hoagie Pizza's (Kristi Original)
Hoagie Bread Sliced lengthwise in half
Butter
Garlic
Basil
Tomato Sauce (Sockarooni by Newman's Own)
Toppings (I did onion, black olives, and pepperoni)
Shredded Mozzarella Cheese
Top the bread with butter, garlic, and basil. Top with tomato sauce, toppings, and cheese.
Bake at 350 degrees until the cheese is melted.

Zucchini Pizza (Kristi Original)
I currently have gestational diabetes and I'm always looking for low carb meals. A friend mentioned using zucchini instead of bread to make pizzas. I was pleasantly surprised by the results.
Zucchini - Cut off the ends and split it in half the long way
Salt

Sprinkle the zucchini with the salt, garlic, and basil. Top with the tomato sauce and the seasonings of your choice (I used onion, black olives, tomato, and pepperoni). Place in the oven on a cookie sheet at 350 degrees for 25-30 minutes. Take it out of the oven, top with cheese and cook longer until the cheese is melted (5-10 minutes). Yum!

We made this one day and were surprised at how good it was. My whole family loved it.
1 Kielbasa Sausage cut up into pieces
2 Potatoes - Cook in the microwave and then cut up into cubes
Sliced Raw Mushrooms
Chopped Peppers
Chopped Onions
Saute the ingredients in Olive Oil with Salt until they are done. Enjoy.
We may have also used other seasonings like garlic or fiesta party mix by Tastefully Simple.

Baked Spaghetti - Kristi Original
Noodles of your choice (I used rigatoni noodles)
Spaghetti Sauce (I used my favorite 'Newman's Own Sockarooni')
8 oz of Shredded Cheese
1 Chopped Tomato
1 Chopped Green, Red, or Orange Pepper
1/4-1/2 Chopped Onion
1/2 -1 Whole container of Sliced Mushrooms
1/2 a Kielbasa or Other Sausage You Like
Oil (Olive, vegetable, etc)
Cook the noodles until they are done, drain them, and mix them with some oil so the pasta doesn't stick to itself. Stir in all of the ingredients reserving 1/2 of the cheese. Top with the remaining cheese. Bake at 400 degrees until the cheese is bubbling. Remove from the oven and serve.

1 Brownie Mix (I used Ghirardelli Double Chocolate Brownie Mix)
Peanut Butter
Hot Fudge (I used half a jar)
Crock Pot
Non Stick Spray
(Optional: Vanilla Ice Cream)
1. Mix up the brownie mix according to the instructions on the package
2. Spray the crock pot with non stick spray
3. Poor the brownie mix into the crock pot
4. Put globs of peanut butter into 5 or 6 locations in the brownie mix. Use a knife to swirl the peanut butter
5. Put globs of hot fudge into 5 or 6 locations in the brownie mix. Use a knife to swirl the hot fudge.
6. Cover the crock pot and cook on high for 3 hours or until the brownies look done. Serve hot plain or with vanilla ice cream

Easy Shredded Pork Sandwiches - BBQ or Other Sauce (Kristi Original)
I recently made a roast in a crock pot. It turned out soooo good! I think this is what I did.
Ingredients:
Pork Shoulder Roast
1/2 cup of water
1 chopped onion
Salt
Pepper
BBQ Sauce or a sauce of your choice
Buns
Pan seer the meet. Take a pan and turn the heat up to med high to high. Place the meat in the pan and cook it on both sides until it is brown. This will seal in the juices.
Put the onions in the crock pot, then the water, finally the roast. Sprinkle the roast with salt and pepper. Cover and cook on low for 8 hours or until fully cooked.
Once the roast is cooked shred, put it on buns, top with your favorite sauce, and serve.
You could serve this meal with potato salad, raw carrots and dip, and baked beans.
